Assalaamu alaikum.
Can we trust these books on Salaah?
Each of these books have 5 schools of Salah (Maliki, Shafi’I, Hanbali, Hanafi, Imami/Shia). But I don't know much about them.
They are used at a Shia site - Salat (Prayer) based on 5 schools of law

  • Fiqh us-Sunnah: at-Tahara and as-Salah by As-Sayyid Sabiq. 1412/1991 American Trust Publications.

This is a good question. there are certain schools that are accepted by the Ummah, but how does one tell the difference?

Yes, this was often my question too in the early days.

Well, the short and easy answer is that "Imami" has no valid standing along with the other four schools.  So, read and take benefit from the four legitimate schools, and compare them with relevant hadith on salat.
