Chicken Sumak Wrap (Musakhan)

Crispy Chicken wrap marinated with Sumak, Onions and Lemon juice. This dish is a specialty of Palestine and Jordan. Can be made with fresh Chicken or Chicken left overs.

Ingredients:
- Skinless Breast of chicken: 1 Small Tray
- Olive Oil: 1/4 cup
- Large Onions: 5
- Small Onions: 1
- Salt: 3/4 teaspoon
- Lemon Juice: 1/4 cup
- Whole lemons: 2 1/2
- Allspice: 1/4 teaspoon + 1 dash
- Water: 3 cups
- Hal seeds: 4 seeds
- Summak: 1/4 cup
- Thin flat Arabic bread (Tannour style): 2-3 sheets
Preparation:
- Boil water, add whole lemons cut in half, add small onion, 1/4 tsp. salt, Hal seeds, 1 dash Allspice. Add chicken breasts. Cover & cook on medium temperature for 45 minutes.
- Remove chicken & set aside.
- Filter the sauce & set aside (see Tarbiali Soup recipe).
- Mince chicken in length in a hairstyle.
- Cut 5 large onions in length in a hairstyle.
- In a deep pan fry in olive oil the onions till yellow gold. Add minced chicken, Summak, Lemon juice, 1/2 tsp. salt, 1/4 tsp Allspice. Mix & stir well on medium fire till all liquid has been evaporated. Remove from heat & set aside.
- Cut thin flat bread(tannour) in rectangles & fill each rectangle with cooked minced chicken & roll them twice.
- In a large flat tray spray base with “Pam“ oil & place chicken rolls sid e by side leaving a small space between them. Spray the rolls top with “Pam“ oil & place tray in oven at 500 degrees temperature for 15 minutes or until crusty & lightly browned.

Remove from heat & serve.
