Apple Cider Muffins

Mixing Fruit and Nut into a moist and delicious Muffin

Ingredients:
* 1 cup all purpose flour
* 1 cup whole wheat flour (or can use AP flour)
* 2 teaspoons baking powder
* 1 teaspoon salt
* 1/2 cup sugar
* 1/4 cup brown sugar
* 1 teaspoon cinnamon
* 1/2 cup apple sauce
* 1/2 cup apple cider (apple cider vinegar works but it is more acidic)
* 1 teaspoon vanilla
* 2 tablespoons canola oil (or melted coconut oil)
* 1 medium green apple, diced
* Optional: 1/2 cup rough chopped pecans or walnuts
Preparation:
Preheat oven to 375 F.

Whisk together all dry ingredients. In a separate bowl whisk together the wet ingredients, not including the apple pieces. Fold the dry into the wet ingredients starting with half of the dry mix. Be careful to not over mix. Read this recipe with video instructions on how to fold ingredients for lighter muffins.

One nearly all dry ingredients have been incorporated fold in the apple pieces and optional nuts.

Either line or oil a muffin pan. Divide batter between the 12 muffins: approximately 1/3 cup per muffin. Bake for 10-12 minutes until a toothpick can be inserted and come out clean.

Store in an airtight container on the counter or freeze for later enjoyment!
If using apple cider vinegar add 1/2 teaspoon baking soda and reduce the baking powder to 1 teaspoon. This will help neutralize some of the acid in the vinegar.
