Ingredients:
5 tomatoes diced
1 large onion diced
1 jalapeno pepper diced
1 Garlic clove, mashed
1 tsp Cumin
1 tsp Salt
1 tsp Black Pepper
4 fresh eggs
1/2 bunch chopped cilantro
Lime wedges

Preparation:
In 12 in skillet, fry the onions until translucid.
Add the tomatoes, Jalapeno and half of the cilantro and cook until soft, 7-10 min
Add cumin, salt, pepper garlic and cook for 3 more minutes.
With blender, blend all ingredients until smooth. Return to pan.
In the Thickened sauce using a spoon, make 4 wells and break each egg into 1 of the wells.
Cook until the egg white is set, about 3 minutes.
Sprinkle with the remainder of the cilantro.
Serve with warm tortilla and lime wedges.
