Beef and Rice Casserole

Serve hot along with a salad
Ingredients:
Rice Mixture:
2 3/4 cups Tomato juice
1 cup uncooked long grain rice
1/2 tsp salt
1/4 tsp garlic salt
Beef mixture:
1 pound lean ground beef
4 Tbsp cooking oil
2 cups sliced celery
1/2 cup minced onion
1/2 cup minced green capsicum pepper
4 Tbsp flour
1/2 tsp salt
pinch black pepper
1/4 tsp oregano
1/4 tsp thyme
1 cup evaporated milk
2 3/4 cups Tomato juice
1 cup uncooked long grain rice
1/2 tsp salt
1/4 tsp garlic salt
Beef mixture:
1 pound lean ground beef
4 Tbsp cooking oil
2 cups sliced celery
1/2 cup minced onion
1/2 cup minced green capsicum pepper
4 Tbsp flour
1/2 tsp salt
pinch black pepper
1/4 tsp oregano
1/4 tsp thyme
1 cup evaporated milk
Preparation:
Rice Mixture:
Bring tomato juice to a brisk boil in a large saucepan. Add rice and seasonings. Cover and cook over low heat until rice is tender, about 20 minutes.
Beef mixture:
Preheat oven to 325°F. Brown meat in a frying pan in hot oil. Add celery, onion and green pepper. Mix well. Cover pan and simmer for 10 minutes. Remove from heat. Stir in flour and seasonings. Add evaporated milk, blend well and pour into a 9“ square baking pan. Top with rice mixture and bake for 45 to 50 minutes. Serve hot along with a salad.
