Vegetable Salad

Serve it with main rice plate, or fried egg
Ingredients:
1 Clove garlic
Salt to taste
1/2 Small hot pepper, optional
1/4 cup Lemon juice
Few stems of fresh parsley and mint, coarsely chopped
1 Small dry onion, finely chopped
1 Small green pepper
4 Leaves Romanian lettuce (other kind may be used)
2 Green onions, coarsely chopped
1 Medium cucumber
1 Medium tomato
1/4 cup Olive oil
Salt to taste
1/2 Small hot pepper, optional
1/4 cup Lemon juice

1 Small green pepper
4 Leaves Romanian lettuce (other kind may be used)
2 Green onions, coarsely chopped
1 Medium cucumber
1 Medium tomato
1/4 cup Olive oil
Preparation:
Mash garlic, salt and hot pepper-�if used. Add lemon juice, mixing well. Cut all vegetables in chunks, add to garlic mixture. Add oil and toss thoroughly.
Variation: Any combination of vegetables may be used, depending upon what is available.
