Lemon Sirop

Lemon Sirop. Chilling Lemon drink to accompany Butter Pound cakes and Butter Cookies.
Ingredients:
Lemons: Juice of 3 cups
- Sugar: 5-6 cups
- Sugar: 5-6 cups
Preparation:
• Wash Lemons & drain.
Grate lemons to obtain about 3/4 to 1 cup lemon skin.
• Cut lemons in half and squeeze to extract juice
Poor lemon juice in a large bowl & add sugar then stir for 3 minutes and until sugar is well mixed with juice.
• Put the lemon skin in a thin fabric bag and close with rope.
• Poor lemon juice & sugar into a deep pan and heat on high fire stirring frequently until all sugar is melted and till bubbles start appearing on top of liquid.
• Reduce heat to light fire and immerge the bag containing lemon skin and stir an squeeze bag into juice to release the essence into the sirop for about 3 minutes.
•Turn off the heat, let the sirop cool down then poor in bottles.
Serve with crushed ice.
