Dandelion salad (Hindbeh)

Dandelion, a bitter herb that is treated like weed in the yard. But this herb is very healthy for you and for increasing the nitrogen content in your soil. We guarantee that once you try this salad, you will create a special place for it in your culinary repertoire.

Ingredients:
2 large onions cut into large strips
2 tbs oil

1 large bunch of Dandelion
1 large onion, chopped
3 cloves of garlic, mashed
2 tbs oil
1 tbs + 1 tsp salt

1/2 lemon
Preparation:
1) Fry the onion strips on medium-high heat in 2 tbs of oil until well browned, about 20-30 min

2) cut the dandelion into 1inch pieces
3) add 1 tbs salt to 1 quart of boiling water and cook the dandelions for 10 min until welted
4) Drain the dandelions using a sieve and press to get most of the water out

5) in the remaining 2 tbs of oil fry the chopped onions + 1 tsp of salt until translucent, about 5-7 min
6) add the garlic and cook for another 1 min
7) Add the dandelion and cook for another 5 min

8) serve on a plate and garnish with the fried onions, squeeze the lemon on top .

Best served with Pita bread
