Wild Rice Broccoli Casserole

Ingredients:
2 bunches broccoli, cut up, stem removed
1 lb cheddar cheese, shredded (reserve some for garnish)
2 cups wild rice
2 10-oz cans cream of mushroom soup
1 lb cheddar cheese, shredded (reserve some for garnish)
2 cups wild rice
2 10-oz cans cream of mushroom soup
Preparation:
Cook rice as directed on package. Cook broccoli in lightly salted water until crispy tender. Mix soup and cheese in a separate bowl. In a 2 1/2 quart buttered casserole baking dish pour in the soup mixture, then the broccoli and finally the rice. Top with reserved shredded cheese and bake in oven at 425°F for 20 -25 minutes. Serve hot. Serves 6-8.
Note: Cooked wild rice maybe substituted with cooked long grain rice.
