Fillings:
1 lb Lamb shoulder, coarsely ground
2 Medium onions, finely chopped
1/2 cup Pine nuts
1/8 tsp Cinnamon
Salt and pepper to taste
Preparation:
Mix all filling ingredients. After basic bread dough has risen 30 minutes, roll each ball as for thick pie crust into 3-4“ rounds. (Re-roll leftover pieces.) Place a tablespoon of filling on the rounds and spread to within 1/2“ of the edges. Pinch the edges to form a triangle leaving a small hole in the center in order for the meat to cook well. Place closely together on well graced pans.
Bake at 400°F for 20 minutes or until golden brown.
Note: You may cook the filling before: Brown pine nuts in butter until golden and remove from fire. Then sauté the meat for 10-12 minutes. Add chopped onions and spices and cook until onions are limp. remove from fire and mix it with the pine nuts.
